The story of Finca San Isidro began in 1975, when Mr. Adan Duke began growing arabica coffee at Finca San Isidro, a picturesque farm located in the lush mountains south of Copán Ruinas, Honduras. Over the past 8 years Duke’s family has transitioned from conventional coffee production to specialty coffee production. Behind their unquestionable success stands Katia, Adan’s daughter, who spent most of her youth on the farm and was dedicated to follow the tradition of her parents. She combined father’s legacy with the knowledge gained at the prestigious San Morano agronomic university and now, after years of struggle, her effort has given many fruits. We had a pleasure to meet Katia at Producer-Roaster Forum in Guatemala while tasting her coffees which, objectively speaking, were the best on the table. As the fresh crop was harvested without hesitation we wanted to bring those delicious coffees for the first time to Poland and Europe.
Thanks to the kindness of the tropics, this property has an excellent climate and blessed soil conditions. The farm has 335 ha of which 27ha are dedicated to the production of coffee, the rest is divided into primary forest that protects 3 water sources which ensures the supply of drinking water throughout the year, both for human consumption and for the coffee processing. Duke’s coffee is shade grown which promotes biodiversity. The shade trees provide home for many of the most beautiful birds of Honduras such as toucans, guaras or hummingbirds.
Due to the altitude and the specific location our coffee cherries ripen slowly during the months of January and February, concentrating the aroma and flavour that characterises our coffee.
Manually harvested coffee is transported to the central processing unit, located in the heart of the farm. The pulp is removed and the coffee is placed in a fermentation tank. It is then dried on the patios on the raised African beds. This process is manual and slow to achieve the highest quality possible.
